This piece is made up of loin, head, sirloin and part of the backbone of the pig. It runs along the dorsal spine of the pig to which part of the ribs to which it is attached are still attached.

  • Description.

     The fresh pork loin is the cut that is located around the loin ribs, this location means that it has more infiltration of fat and its flavor is more intense.

    This piece has a very consistent and firm texture.

  • Conservation.

    It can be kept in two ways, refrigerated at a temperature below 5ºC and if we want to freeze it at a temperature of -18ºC.

    Unlike other pieces for consumption, we have to thaw it 2 days after.

    • Fresh vacuum packed: 15 days of preferential consumption.
    • Frozen vacuum packed: 24 months of preferential consumption.
  • Consumption.

    This piece admits any type of preparation. When older, it gives us the opportunity to separate the headboard from the spine independently.
